Overnight Vanilla Chia Seed Pudding
If you like pudding, this is a tasty (and healthy) way to get your pudding fix along with flavor and fiber! There are many variations you can do with chia pudding - add spices/flavorings, make it vanilla, chocolate, berry, peanut butter-chocolate, etc.
Make this into a parfait by layering the chia pudding with Unsweetened Vanilla Silk Almond Milk Yogurt and organic mixed berries!
Overnight Vanilla Chia Seed Pudding
Ingredients
1.5 cups unsweetened almond milk (or unsweetened cashew milk, unsweetened Ripple milk, or full-fat coconut milk)
1/3 cup chia seeds
1 Tbsp NuStevia Vanilla syrup (or Choc Zero maple syrugp) (you could also use honey or pure maple syrup if not watching sugar intake)
1/4-1/2 tsp ceylon cinnamon, optional
1/2 tsp pure vanilla extract
pinch of salt
Blend everything together except chia seeds. You may use a blender if you feel it is not blending together enough for you but I find I don’t need to. Add chia seeds. Let sit a minimum of 4 hours or overnight. If you think of it, stir the mixture once or twice as it is gelling together to help the seeds absorb throughout more evenly.
