Fat Bombs

A wonderful, nutrient-dense, chocolate-fix snack!

These do not raise my blood sugar when I have tracked my blood sugar and I did use the protein powder. These would be even more blood sugar-friendly if you leave the protein powder out, but I find it helps them come together better.

Fat Bombs

Single Batch:

2 Tbsp almond butter

1 Tbsp coconut oil

Melt together.

1 Tbsp protein powder - (optional but I think these turn out better when I add this in)

1 heaping tsp cocoa powder

2 drops peppermint essential oil - optional (I use Young Living Essential Oils which are 100% therapeutic; their peppermint is safe for ingestion)

2 Tbsp crushed nuts (pecans, walnuts, almonds, etc)

Pour into molds. Freeze and Enjoy.

I like to multiply this and divide up into silicone ice cube trays. I either make x 6 or x 8.

My latest version:

1 cup Sunbutter Organic Sunflower Butter

8 Tbsp organic virgin coconut oil

1-2 scoops Designs for Health PurePaleo Protein Chocolate (I used 1 scoop this time)

1/4 cup cocoa powder

4-6 drops Young Living Peppermint Essential Oil

1 cups walnut pieces (I use Fisher brand as I know they are gluten free)

1-2 tsp vanilla

1-2 tsp pure stevia powder

Melt coconut oil. Mix with sunflower butter. Add remaining ingredients and mix together. Pour into molds. Freeze. Enjoy.

Made 42 cubes.

Per cube: 85 calories, 2.4 grams protein, 0.7 net carbs, 7.9 g fat, 1 g fiber, 0.2 g sugar

Notes:

x 6 fits well in a glass 9 x 13 pan

I like to put in silicone molds so they are individual portions and easy to pop one (or 2 or 3…) and eat.
