Keto High Fiber Bread (gluten-free, grain-free, vegan, keto)
Ingredients
1/2 cup coconut flour
1 cup almond flour
1/2 cup coconut oil, melted but cool
1/2 cup plain psyllium husk powder
1/2 cup Swerve
1/2 tsp sea salt
1.5 tsp baking powder
1/4 -1/2 c sesame seeds
1/2 cup chopped pecans (opt)
1/2 cup hemp seeds
6 Tbsp Bob’s Red Mill Egg Replacer + 12 Tbsp water - combine and let sit to gel
1 cup coconut, almond or cashew milk
Instructions
Preheat oven to 350 degrees.
Grease a 9x5 loaf pan.
Melt coconut oil and let cool.
Using a mixer, combine all dry ingredients including nuts.
Add egg replacer and coconut oil.
Mix gently until ingredients are fully combined. Do not overmix. Batter will be thick.
Put batter into greased loaf pan.
Bake at 350 degrees F for 45-60 minutes or until tooth pick comes out clean.
Cool bread completely before slicing.
Store leftovers in the fridge or freezer.
