Easy Aquafaba Mayo (vegan, gluten free)

Ingredients

1/4 cup aquafaba (liquid off a can of cooked beans, usually chickpeas)

1 tsp ground mustard

1/2 tsp sea salt

2+ tsp Bragg’s apple cider vinegar

1/2 - 1 Tbsp maple syrup (I like ChocZero syrup for a no-sugar option)

3/4 - 1 cup avocado oil

Directions

Add all ingredients except oil to a tall glass jar. I find a 1 quart glass canning jar works well.

Using an immersion blender, blend for 30 seconds or until frothy.

With the immersion blender going on its highest speed, slowly add the oil in. Move the immersion blender up and down to make sure you get all ingredients blended together. The more oil you add, the creamier and thicker the mayo will become. I like using the full 1 cup.

You can use immediately.

Store in sealed glass jar in the refrigerator.
