Grain-Free Granola

Ingredients

Version 1

2 cups tigernuts, sliced or chopped or combo

1 cup walnuts (or 1/2 cup walnuts and 1/2 cup pecans), chopped

1/2 cup pepitas or sunflower seeds (or a mix)

1/2 cup ground flaxseed

1/2 cup protein powder or collagen powder (1/2 of each works, too)

2 tsp cinnamon

1/2 tsp sea salt or Real Salt

1/3 cup maple syrup or sugar-free syrup such as Choc Zero (or homemade syrup)

1/4 cup coconut oil

Version 2

2 cups tigernuts sliced

1/2 c. raw chopped walnuts

1/2 c. raw chopped pecans

1/2 c. raw pepitas

1/4 c. raw sesame seeds, unhulled

1/4 c. raw sunflower seeds

1/2 c. collagen protein, unflavored (I used Sports Research brand)

3/4 tsp Pink Himalayan salt

1/3 c. MCT oil

1/3 c. homemade syrup

2 tsp glucomannan powder (I used NOW brand)

4 drops organic liquid stevia, toffee flavor (I used Nature’s Way brand)

Directions

Preheat oven to 350 degrees F.

Mix dry ingredients together. Mix coconut oil and syrup together. If using the glucomannan, mix into room temperature MCT oil until dissolved. Then add the syrup and stir together.

Pour liquid mixture over the dry ingredients. Mix to combine.

Evenly spread on cookie sheet lined with parchment paper.

Bake for about 25-30 minutes or until golden brown.

Cool and break into pieces. Store in airtight container.
