A grain-free, gluten-free flour blend that can be used in place of regular flour.

Grain-Free Flour Blend

Ingredients

300 grams or 2.25 cups buckwheat flour (best if use buckwheat groats and blend into a fine powder; store-bought works, too)

300 grams or 2.5 cups blanched almond flour

300 grams or 29 tablespoons (1.75 cups + 1 Tbsp) potato starch

100 grams or 3/4 cup arrowroot powder

Directions

Mix all ingredients together. You may want to sift the ingredients together using a wire whisk to fully blend all the flours together. Store in airtight container.

*Using a kitchen scale and and measuring by weight is more accurate than measuring by cups
