Keto Cauliflower Salad

This salad uses cauliflower in place of potatoes for a low-carb, delicious salad.

This is great paired with grilled food. I also love to mix in fresh broccoli sprouts for extra nutrition.


SALAD INGREDIENTS

1 larger head cauliflower, steamed

5 oz grass-fed beef bacon, cooked & crumbled

3 celery stalks, finely chopped 

1/2 red onion, finely chopped (or for a milder taste, use green onion)

2 tbs fresh chives 

DRESSING INGREDIENTS

1 1/2 cup avocado oil mayonnaise (I love Chosen Foods or Primal Kitchen)

3/4 tbsp. dijon or spicy brown mustard 

3/4 tbsp. Bragg’s Apple Cider Vinegar 

Real Salt or Pink Himalayan Salt to taste

Black pepper to taste

INSTRUCTIONS

Chop the cauliflower into small pieces. Lightly steam to desired doneness. I steamed mine using organic chicken broth for added flavor.

Let the cauliflower cool as you assemble the rest of the salad.

Combine dressing ingredients together and mix until well combined.

In a large bowl, combine salad ingredients.

Pour the salad dressing over the cauliflower mixture and gently blend together.

NOTE: You may not want to add all the dressing right away because if you have a small head of cauliflower, it may end up with too much dressing to your liking.
