Cherry Jam
This is so easy to make and is so delicious! Best of all, you can control the ingredients. Delicious topped on my Paleo Sandwich Bread along with some raw nut butter.
This would work with other fruits such as strawberries, blueberries or mixed berries.
Ingredients
16 oz bag frozen organic dark sweet cherries
1/4 c sweetener (I use Swerve, Pyure, or Lakanto Monkfruit)
1 tsp organic lemon juice
1 tsp glucomannan
Directions
Put cherries into saucepan. Smash cherries to create more liquid.
Bring cherries to a boil and then reduce heat to simmer. Cook for about 10 minutes, occasionally stirring and mashing the cherries.
Add sweetener of choice, lemon juice and glucomannan. Stir well. Cook until the mixture thickens up a bit. It will continue to thicken as it cools.
Remove from heat.
When mixture is fully cool, place in glass jar and keep in the refrigerator.
