Two-Ingredient Pizza Dough
Ingredients:
2 cups grain-free self-rising flour, plus more for dusting*
1 cup dairy-free yogurt or Greek Yogurt (both Silk Unsweetened Vanilla Almond Dairy-Free Yogurt Alternative or Daiya Classic Plain Greek Yogurt Alternative work well)
Directions:
Mix flour and yogurt together. I love to use my KitchenAid mixer. You can also put ingredients in a bowl and mix by hand with a fork.
If using mixer, mix until dough is smooth and elastic. If mixing by hand, put mixture onto lightly floured surface and knead until the dough is smooth and slightly elastic. This could take about 5-10 minutes.
If dough feels dry, add a little water or yogurt and continue kneading until desired consistency is reached.
Place dough on parchment paper or directly onto greased pizza pan. Using either a rolling pin or your hands, roll (or pat) dough out into circle until desired thickness is reached. This is enough dough for 1 larger pizza or about two 10-inch pizzas.
Top the pizza dough with desired toppings.
Place pizza pan in oven (or on grill!). If using parchment paper, place on pizza stone or baking sheet.
Bake at 450 degrees for 8-10 minutes or until crust is golden.
* Grain-free self-rising flour recipe:
2 cups grain-free flour blend
3 tsp baking powder
1 tsp salt (sea salt or Real Salt)
I like to add 1 tsp Xantham gum but this is optional. I have found it helps hold gluten-free dough together.
Note: Although it is cheaper to make your own, Bob’s Red Mill Grain-Free Paleo Baking Flour works well in place of making your own flour blend.
