No-Bake Pumpkin Pie

No-Bake Pumpkin Pie

Servings          6 people

Ingredients

  • 1 16-oz can pureed pumpkin (or homemade)

  • 1/4 tsp powdered pure stevia

  • 1/2 cup coconut cream

  • 1.5 Tbsp gelatin

  • 1/2 tsp pumpkin pie spice

  • 1/4 tsp sea salt or Real Salt

Instructions

  1. To a cold medium-sized pot, add all ingredients. Then turn the heat onto medium-low and keep stirring the mixture to dissolve the gelatin. Whisk well to eliminate any clumps. Cook for about 5-10 minutes until hot.

  2. Pour mixture into greased 8 x 8 glass dish and place into refrigerator for at least 6 hours or until set. Once set, serve cold and enjoy! Garnish with additional coconut cream, if desired. (May divide up into 6 greased ramekins if desired).

    I like to make more than one batch at a time. When I double this, I put it in a 7 x 11 pan. When I make a triple batch, I put it in a glass 9 x 13 pan.
