Air Fryer Sweet Potato Bowl

Ingredients

1 large sweet potato, cubed

1-2 small onions, small chunks

2-4 large handfuls of kale

1/2-1 cup black beans

garlic powder

Real Salt

Avocado Oil - I like the non-aerosol avocado oil spray (could also using coconut oil)

Directions

Preheat air fryer to 350 degrees F.

Lightly spray cubed sweet potatoes. Season with garlic powder and salt to taste (add other seasonings as desired). Place in air fryer.

Check potatoes about every 5 minutes and shake.

While cooking sweet potatoes, cut up and lightly spray and season onions.

When potatoes are about halfway cooked, add the onions. Continue to cook and shake every 5 minutes.

While mixture is cooking lightly spray kale with oil.

When potatoes and onions are browned, add in kale and black beans.

Continue cooking and shaking mixture but do this every 2-3 minutes as kale cooks quickly.

When kale is crispy and lightly browned, remove from air fryer.

Enjoy.

This is amazing with my homemade poppyseed dressing!
